Is it possible to play individual levels (or at least individual cinemas) of LATM without having to install the whole set?

Not as such. You could, however, decompile the script file (with TRWest) and make new Script and English files with PlayAnyLevel= ENABLED.

You don't have to decompile it -- just use Scripter4. Load the SCRIPT.DAT file and ENGLISH.DAT from Lara at the Movies, then go to Main Settings and check Play any level, then save

i think that our dear gerty has a script for play any level to latm
